The 5 Best Yeast Strains for Homebrew Beer

After years of brewing and experimenting with different yeast strains, I've narrowed down my favorite yeast strains for brewing beer at home. These yeasts are reliable workhorses that consistently deliver exceptional results. Each strain excels in specific beer styles, and having them in your brewing arsenal will set you up for success across a wide range of recipes.

1. White Labs WLP-001 (California Ale) - The Ultimate Clean Ale Yeast

When I need a yeast that gets out of the way and lets the hops and malt shine, WLP-001 is my go-to choice. This strain is incredibly versatile and forgiving, making it perfect for both beginners and experienced brewers who want consistent results.

  • Excellent attenuation (typically 73-80%)

2. Fermentis Saflager W-34/70 - The Lager Champion

For lager brewing, nothing beats the reliability and performance of W-34/70. This German-style lager yeast is a true workhorse that produces crisp, clean lagers with minimal fuss.

The craft beer world's obsession with Cold IPAs and hybrid styles has made Mythical Hammer an absolute must-have. This Norwegian kveik-derived strain combines the best of both worlds: ale-like fermentation speed with lager-like clarity.

4. Lallemand BRY-97 - The West Coast IPA Specialist

For West Coast IPAs, i’ve used WLP - 001 and US - 05 in the past, and both are great options. But those are medium flocculating yeasts, meaning without sufficient time and other preparations, the beer might not be super clear. If you’re looking to really make your beer stand apart from the opposite end of the scale, something like a NEIPA, then nothing beats Lallemand’s  BRY-97.

BRY-97 is an American West Coast ale yeast specifically selected for its ability to showcase hop bitterness and aroma while maintaining a clean, dry finish.

Why it's perfect for West Coast IPAs:

  • Enhances hop character without adding competing flavors
  • High attenuation (77-82%) creates that signature dry finish
  • Excellent flocculation for clear, bright beer

I've used it in countless West Coast IPAs and Pale Ales, and it consistently delivers that crisp, bitter, hop-forward profile that defines the style.

5. London Fog - The Hazy IPA Master

For New England-style IPAs and hazy beers, London Fog has become my secret weapon. This strain creates the perfect balance of tropical fruit esters and biotransformation that makes hazy IPAs so appealing.

What makes it ideal for hazy IPAs:

  • Produces beautiful tropical fruit and citrus esters
  • Excellent biotransformation enhances hop flavors
  • Stays in suspension for natural haze
  • Moderate attenuation (68-75%) leaves some sweetness

When fast fermentation is needed, Voss Kveik can't be beat. It also produces super clean beer at very high fermentation temps. In short, this traditional Norwegian farmhouse yeast ferments at blazing speeds while producing distinctive esters that add complexity to any beer style.

What makes it ideal for fast fermentation:

  • Ferments completely in 2-3 days at high temperatures
  • Thrives at 80-95°F (some brewers push it to 100°F+)
  • Produces orange and citrus esters at higher temps
  • Highly flocculent - drops crystal clear quickly
  • Extremely alcohol tolerant and stress-resistant

Voss Kveik doesn't just ferment fast – it ferments clean at temperatures that would stress other yeasts into producing off-flavors.
