Understanding the Style: Dry Irish Stout

This isn't a big, sweet, pastry stout. The magic of a Dry Irish Stout is in its balance of bold flavor and supreme drinkability. Here's what makes this style a legend:

  • The Roast: The signature sharp, coffee-like flavor doesn't come from chocolate malt or black patent malt. The workhorse here is Roasted Barley. Because it's unmalted, it contributes a distinct, dry, and sometimes acrid roast character that is the absolute cornerstone of the style. It's all flavor, with no underlying sweetness.

  • The Creamy Head: How does a light-bodied beer produce such a thick, creamy, long-lasting head? That's the job of Flaked Barley.
