Oktoberfest Recipe Kit

The clock is ticking if you want a perfect fall beer ready for the actual festival season. But what if you don't have a dedicated fermentation chamber to hold temps for a traditional lager?

This kit is your answer. We've taken the rich, complex malt bill of a classic German Märzen and paired it with a clean-fermenting ale yeast. The result is a delicious, malty, and incredibly satisfying Oktoberfest-style ale that you can ferment at ambient temperatures—no lagering required. It’s all the flavor of the season, with a fraction of the fuss.

Understanding the Style: A Homebrewer's Oktoberfest

Let's get this out of the way: a traditional Märzen is a lager. This is an ale. We specifically designed this recipe as a practical solution for the modern homebrewer.

It's Still All About the Malt: The soul of this beer is unchanged. It's a showcase of malts, delivering a profile that is rich, bready, and toasty—like a freshly baked loaf of bread in a glass. That signature character comes from a hefty dose of Riverbend Munich malt and Pilsner malt. It's malty, but it is not a sweet beer.

The "Ale" Advantage: Instead of a demanding lager yeast, we use SafAle US-05 which is a clean fermenting ale yeast. This yeast is a workhorse, known for its ability to ferment cleanly at warmer, ale temperatures with minimal fruity esters. Its job is to do the work efficiently and then get out of the way, letting that beautiful German malt character shine through.

The Result: Will it be a 100% identical clone of a lager from Munich? No. Will it be a delicious, smooth, copper-colored ale with a huge, bready malt presence that's perfect for fall? Absolutely. And the best part? You can go from brew day to glass in about 2-4 weeks.

Balanced by Noble Hops: Just like the original, the hops are only here for support. Classic German Noble Hops provide a clean bitterness to balance the malt, keeping the focus squarely on the grain.

This kit is the perfect way to brew an amazing seasonal beer without the time or equipment commitment of a traditional lager.

      Holy Smokes!

This was the second recipe brewed with the new Clawhammer All In One 10 gallon set up. First is Bourbon Barrel Ale which is still aging. Although I forgot to add the whirlfloc tablet, this beer turned out so clear that it could be compared with the pros. Keg ferment with spunding valve 2 weeks. Cold crash 34 Deg. 1 week. CO2 two days and was ready and impressive out of the gate. The flavor is outstanding and true to the style. I'd say it's somewhat close to a Hofbrau. Great kit and brew system. Thanks guys.
