Mango & Papaya with a Piney Backbone • Big Tropical Aroma
Azacca, named for the Haitian god of agriculture, was developed by the American Dwarf Hop Association and has become a go-to for brewers chasing ripe mango and papaya. Under the fruit sits a piney, citrusy structure that keeps tropical IPAs from tasting one-dimensional.
Alpha acids run around 15%, so it can pull double duty, but its oils reward late additions where the fruit stays vivid.
Flavor & Aroma Profile
- Ripe mango and papaya
- Bright orange citrus
- Pine and light spice
- Fresh tropical aroma
Brewing Applications
- American IPA
- New England / Hazy IPA
- Pale Ale
- Double IPA
Usage Recommendations
For a 5-gallon batch, add Azacca in the whirlpool below 180°F and in the dry hop. It pairs well with Citra, Mosaic, and Idaho 7, and single-hop Azacca pale ales show off its full range.
