Touchscreen Pro Brewing and Distilling Controller Manual

Questions: support@clawhammersupply.com. Current for V 19.420.69.

1. Calibrate the probe before it goes in the kettle

Do not install the probe in your kettle yet. Calibrate it first, with the probe loose, so you never have to pull it back out. It takes ten minutes and a glass of ice.

  1. Plug the temperature probe into the probe jack on the controller. Leave it out of the kettle for now.
  2. Plug the controller into the wall. A 120V controller goes on a 120V outlet, a 240V controller on a 240V outlet. The two breakers on the back are the power switch. Flip them both. On is with the blue bar toward the words on the breaker, opposite the orange square.
  3. Follow the prompts on the screen: our terms, which power it is on, F or C, Wi-Fi. Section 2 shows every screen. On the last card, SETUP COMPLETE, tap CALIBRATION, then START under COLD POINT.
  4. Fill a small glass with ice. Crushed ice or small pieces work better than big cubes. Add just enough water to fill the gaps between the ice. If the ice floats, there is too much water. Pour some out.
  5. Let it sit a minute, then stir. Put only the probe tip in, two or three inches deep, into the ice itself and not the water under it. No wires in the glass.
  6. Keep stirring and wait for the number to settle. It should read close to 32 F. Capture it. If the reading stalls well above 32, the bath is not cold enough; add ice and stir again.
  7. Now install the probe in the kettle, and plug the heating element into the element outlet and the pump into the pump outlet. From here on the probe tip has to be in the liquid whenever heat is on.
  8. BOIL POINT comes on your first full boil: with the probe in the water and the kettle at a rolling boil, open CALIBRATION under the gear and capture it. The controller knows the boiling point at your elevation.

If a mash reading is still off by a degree after that, the Fine-Tune slider on the calibration screen shifts the reading without touching the calibration.

Why a new probe reads a few degrees off. The probe is a PT100, the same platinum sensor used in industrial and laboratory instruments, and it is a precise one. Even so, every probe and controller pair reads a little differently out of the box, because the cable and the measuring electronics each add a small fixed shift. That is why every serious temperature instrument is calibrated as a complete system, and why the controller has a two-point calibration built in. Three or four degrees before calibration is normal. After it, expect the reading to be within about a degree, which is plenty for brewing. If you are checking it against a handheld thermometer, remember that the handheld has its own error, often a degree or two, and that a kettle without the pump running is warmer at the top than the bottom, so compare at the same spot with the pump on.

2. The setup screens

The first time it is switched on, the first screen is our terms. Read them, scan the QR for the full text if you like, and tap I AGREE. The controller does not brew until you do. The full terms are at brew.clawhammersupply.com/terms.

The terms card after an update. The amber line says the terms changed; a controller that never had them is told the update adds them.

Then SYSTEM SETUP walks you through a few cards. Each one asks a question and has two buttons.

  1. Which power is this controller on? Tap 120V or 240V. This sets the heating power, so answer honestly.

Within a minute on Wi-Fi the controller checks for an update by itself. When it offers one, tap INSTALL and leave it alone for a minute. It restarts on its own. The gear, then ABOUT, shows the version and CHECK NOW.

3. Build a recipe on the controller

You do not need an account to brew. The home screen, MY RECIPE, has a MASH card and a BOIL card. Tick what you want and tap the card.

  1. Tick MASH. The card says tap to add your mash steps.

Mash Step Order (gear, BREWING). AUTO puts your mash steps in order from coolest to hottest, which is how a step mash climbs. MANUAL keeps them in the order you entered them and shows arrows in the editor to move a step, for a mash that steps down. It is locked during a brew day.

Strike water temperature (gear, BREWING, Strike temp). Off, called IGNORE, the controller heats your water to the mash temperature and asks for the grains there, as it always has. Set it to USE and a recipe can carry a strike temperature: the controller heats to the strike, asks for your grains, then drops to the mash temperature and holds. Beer Builder sends a strike number with every recipe and BeerXML files can carry one, or type your own on the recipe's MASH screen with the STRIKE TEMP chip. Locked during a brew day.

  1. Tick BOIL. The card says SET BOIL TIME until the boil has a time. Tap the card, then SET BOIL TIME, type the minutes and SAVE.

Connecting Brewfather

Brewfather recipes come onto the controller through your Brewfather API key. You need Brewfather Premium, since reading recipes through their API is a Premium feature.

  1. Link your controller to your Clawhammer account first, the steps above.
  2. In the Brewfather app go to Settings, then API, and tap Generate key. Tick Read Recipes for the key's permissions. Brewfather shows you a User ID and an API key.
  3. Back on the pairing page on your phone, bldr.clawhammersupply.com/pair, scroll to the bottom. The last section is Link Brewfather.
  4. Paste your User ID and API key into the two boxes and tap LINK BREWFATHER.
  5. The page says Linked. Your Brewfather recipes will appear on the controller. If it says the key check failed, check the ID and key pair, and that your account has Premium.

From then on your Brewfather recipes show up on the controller under RECIPES, then ONLINE, next to your Beer Builder ones. Tap one to load it.

Favorites. The pairing page at bldr.clawhammersupply.com/pair shows every recipe your controller can load. Tap SEND next to a recipe and it moves to the top of the ONLINE list on the controller, marked with a star. Tap REMOVE to take it back off the top.

5. Load a recipe from Beer Builder

  1. Tap RECIPES. On a linked controller it opens ONLINE, your library, twelve to a page with the style, ABV and IBU under each name. NEXT 12 pages through it.

6. Brew day

Fill the kettle with your strike water, put the probe in, and have the pump plumbed and primed with the ball valves open. Then tap START HEATING. From here the controller tells you what to do and when; the amber panel in the middle is always the next thing it needs from you. If Strike temp is set to USE and the recipe has one, the first target is the strike temperature and the grain prompt comes there.

  1. The brew screen: HEAT and PUMP switches on the left, the kettle temperature big in the middle with the target under it, the mash steps on the right, and the heating estimate at the bottom left.

  6. It heats to the boil with a live estimate, and the right column becomes your hop schedule, UPCOMING STEPS. BOILS AT shows the boiling point at your elevation. It is measured from the air pressure the controller reads and is good to about a degree. ELEVATION under it is an estimate, a few hundred feet either way; the boil does not depend on it.

ADD 60-MIN HOPS, then HOPS IN
  9. When the boil timer hits zero it says BOIL TIME DONE. Tap END BOIL. Then it chills to the whirlpool temperature, asks for the whirlpool hops, steeps them on a timer, and chills toward the pitch temperature. A recipe with a settle on its whirlpool adds one step: when the steep runs out the controller turns the pump and the heat off by itself, chimes, and counts the settle while the hops drop; the middle panel reads SETTLING, and if you switch the pump back on the clock holds until it is off again. At zero it chimes again and moves on. While it chills, the panel says what comes next, and a small finish early button under it ends the day without the steps that remain; the card names them before you say yes. Once nothing is left, finish brew day ends it.

7. Watch from your phone

There is no app and no subscription. The phone page is a web page that opens in the browser of any iPhone or Android phone, and you do not need an account to watch a brew day or to get alerts. An account is only for your recipes and brew reports (section 4).

Tap the Clawhammer logo on the brew screen and scan the QR. The page shows the live temperature, the target, heat and pump, the step and the timers, and a graph. GET PHONE ALERTS turns on notifications: almost at mash temperature, mash almost done, boil reached, hop additions, boil done, and a warning if the controller ever drops off Wi-Fi. FOLLOW EVERY BREW DAY keeps it for next time. A phone can watch, it can never control the heat.

So you can leave the kettle during the mash or the boil and the phone tells you when to come back.

On an iPhone the page shows a card, Get alerts on your iPhone, the first time: tap the Share button, choose Add to Home Screen, then open the new Clawhammer icon and tap GET PHONE ALERTS there. iPhones only deliver notifications to pages saved on the Home Screen, and from the icon it opens like an app. On Android the browser's own menu has the same Add to Home screen choice, and alerts work either way.

8. Schedule a start

SCHEDULE START on the home screen heats your strike water ahead of time, so it is hot when you walk in.

  1. Set the day and the time. The time you set is when the water will be hot, not when heating starts. The controller works back from how fast your kettle heats.
The picker. Run pump during preheat is off by default.

Warning. SCHEDULE START turns the heat on while nobody is watching it. If a relay fails on, the heat stays on until you unplug the controller. Use it only with the kettle filled above the element, nothing nearby that can burn, a GFCI outlet, and a start time close to when you will be up to check it.

9. Manual mode

The pill at the top of the screen switches between BREW MODE and MANUAL MODE. If a recipe is loaded it asks whether to clear it first. Manual mode is for cleaning cycles, sous vide, keeping strike water warm, and distilling runs.

  1. PWR % runs the element at a set power. Use the slider or tap the percent to type a number. HEAT switches it on.

  3. BOILS AT shows the boiling point at your elevation, measured from the air pressure and good to about a degree; ELEVATION is an estimate. The STOPWATCH times a run. The logo opens the phone page here too.

10. Safety, settings and help

The controller switches a heating element and a pump. It is not a safety device. Stay where you can see or hear it while heat is on. If a relay ever fails on, the heat stays on until you unplug it.

The gear opens SETTINGS: CLOCK, BREWING, CALIBRATION, SCREEN & SOUND, SYSTEM, WIFI, SUPPORT, ABOUT and LOCK SCREEN. SYSTEM holds the temperature unit, the voltage, the heating power limit and Factory Reset. LOCK SCREEN locks the glass so you can wipe it mid-brew.

SETTINGS
SETTINGS

If something looks off, tap the gear, then SUPPORT, then SEND TO SUPPORT. One tap sends the controller's report to us and shows a report code. Email support@clawhammersupply.com with that code and what you saw.

Factory Reset asks which kind you want. RESET, KEEP MY ACCOUNT clears the settings, Wi-Fi and calibration but keeps your saved recipes, your account link and your brew history. RESET FOR A NEW OWNER clears everything, saved recipes included, and deletes the controller's records on our server. Use that one before you sell or give it away.

The two kinds of reset
The two kinds of reset

11. Getting the latest version of a recipe

A recipe on the controller is a copy, taken the moment you loaded it. If you change the recipe in Beer Builder or Brewfather afterwards, the controller does not know until you load it again.

  1. Back out to the home screen.
  2. Tap RECIPES, then ONLINE.
  3. Tap the recipe. The controller fetches it fresh from Beer Builder or Brewfather right then and loads the current version.

If a recipe you just saved is not in the list yet, wait a minute and open ONLINE again. The list can run up to a minute behind. The recipe you tap is always the current one.

12. Settings, tile by tile

Tap the gear at the top left of any screen. SETTINGS is two columns of tiles: CLOCK, BREWING, CALIBRATION, SCREEN & SOUND, SYSTEM, WIFI, SUPPORT and ABOUT, with BACK and LOCK SCREEN along the bottom. SYSTEM goes grey during a brew day or while heat is on; every other tile opens. Under each tile, every row you can touch: what it is, its choices with the new-controller setting in brackets, and whether a brew day locks it.

CLOCK

  • The screen shows the time and date.
  • Time Zone opens a list of fourteen zones. Pick yours and the clock moves at once.
  • Date & Time, SET, opens SET CLOCK with wheels for the month, day, year, hour and minute, then CANCEL or SET CLOCK.
  • 24-Hour Clock (OFF) changes the format.
  • Set From Internet (ON) lets the controller set its own time over Wi-Fi. With it on, a time you set by hand can be overwritten.
  • Nothing here is locked.

BREWING

  • Chilling Water Warning (+10°F) is a slider from 0 to 25. While you chill after the boil, the controller chimes and says SHUT OFF CHILLING WATER when the wort is that many degrees above the whirlpool or yeast target.
  • Mash Step Order (AUTO) is in section 3.
  • Run Without Probe (OFF). ON lets manual mode run at a set power with no probe reading. A brew day and any set temperature still need the probe. It switches itself back to OFF when the probe is found again.
  • Brew day on your phone. PAIRED lists the phones that get this controller's alerts, with FORGET for each. ADD PHONE shows the QR for the phone page during a brew day; outside one it tells you why not.
  • Strike temp (IGNORE) is in section 3.
  • The four settings grey out during a brew day or while heat is on, and the note under them says so. The phone row stays live.

CALIBRATION

  • Section 1 walks the first calibration.
  • Three cards, COLD POINT, AUTO-TUNE and BOIL POINT, each with START, and each shows what it holds. The two points can be done in any order and either can be redone alone.
  • COLD POINT offers CANCEL or CAPTURE COLD.
  • BOIL POINT starts with READY, which turns full heat on. Then PAUSE, CANCEL or CAPTURE BOIL, which turns heat off and records the reading. The button turns yellow within a few degrees of your local boil.
  • If nobody captures, heat turns off by itself after fifteen minutes steady or two hours in all, and the button reads REHEAT.
  • If a new reading sits well away from where ice or your local boil should be, a card says THE ICE POINT LOOKS OFF or THE BOIL POINT LOOKS OFF, with CAPTURE ANYWAY or GO BACK.
  • Fine-Tune shifts every reading by up to nine degrees either way, in tenths.
  • CLEAR CALIBRATION wipes both points and Fine-Tune after you confirm with CLEAR or KEEP.
  • During a brew day the three STARTs are grey and Fine-Tune still works.

SCREEN & SOUND

  • Brightness (70%) is a slider, live as you drag.
  • Screen Orientation, NORMAL or FLIPPED (NORMAL), turns the picture over for a wall mount and asks RESTART TO APPLY. With heat on it waits for the next restart.
  • Volume (50%) is a slider.
  • Alert Sounds, RETRO, DING or OFF (RETRO). Tapping RETRO or DING plays it.
  • Nothing here is locked.

SYSTEM

  • The whole tile is locked during a brew day or while heat is on.
  • Temperature Unit, °F or °C.
  • Voltage Mode, 120V or 240V. It loads that supply's heating tune and its own power limit.
  • Heating Power Limit (100%) is a slider from 1 to 100 that caps the element in every mode. The first drag shows POWER LIMIT, what it means.
  • Factory Reset, RESET, opens the two kinds in section 10.
  • Crash Reports, ON or OFF (ON), and Brew Day Reports, ON or OFF (ON), are in section 19.

WIFI

  • WiFi Enable turns the radio on or off.
  • The status line reads your network's name with a check mark, Connecting, Not connected or WiFi is off. Tap it for the details page with the IP Address, Netmask and Gateway, and FORGET, which drops the saved network at once with no confirm.
  • Below it, every network in range, strongest first, with a padlock on the secured ones. Tap one for the password keyboard, with Show, then DISMISS or JOIN NETWORK. An open network asks JOIN OPEN NETWORK first.
  • One network is remembered at a time. Not locked.

SUPPORT

  • Six lines refresh every few seconds: Firmware, Running for, WiFi, Probe, Memory and Last restart.
  • SEND TO SUPPORT sends the controller's report over Wi-Fi. The button then reads SENT - THANK YOU with a REPORT CODE, or says why not, such as NO WIFI - SENDS LATER. Email support@clawhammersupply.com with the code and what you saw. It works with Crash Reports off.
  • The QR on this screen carries the same snapshot for a phone. Not locked.

ABOUT

  • Model, Firmware, Bootloader, Controller ID, the two radio ids, the support email, the terms line with the version you accepted, and the open-source notices address.
  • Opening ABOUT checks for an update. The status line says what it found, from Checking for updates to Firmware is up to date or Firmware update is available.
  • The right button reads CHECK NOW, UPDATE when one is offered, or CANCEL while it downloads. UPDATE asks YES or NO, downloads, then UPDATE READY offers INSTALL or NOT NOW. The controller restarts to install, under a minute.
  • While heat is on it says UPDATE WAITS and does nothing until heat is off.

LOCK SCREEN

  • For wiping the glass. Tap it and the screen ignores every touch for thirty seconds, under LOCKED FOR WIPING with a countdown, then unlocks itself.
  • There is no way to unlock early. Heat and pump carry on as they were.

13. Your recipe's own options

  • MASH and BOIL. Tick a card to include it. An unticked card says Not included - check to include. Adding a step or a hop ticks its card by itself. A boil with no hops is fine. START HEATING or SCHEDULE START with neither card ticked says NOTHING TO BREW YET.
  • Steps. Up to eight. Each has a temperature, minutes (60) and a name if you like. Out of range it says STEP TEMP: 32-212°F ONLY or HOLD MINUTES REQUIRED. The X removes a step. Mash Step Order and Strike water temperature are in section 3.
  • BOIL TIME. The chip reads SET BOIL TIME until you set it. 240 minutes is the most, and it cannot be shorter than your longest boil hop; the pad says A HOP ADDITION IS AT that many minutes.
  • Hops and additions. Up to twelve. When you add one you pick BOIL, FLAMEOUT, WHIRLPOOL or YEAST. BOIL asks the minutes before the end of the boil (60). FLAMEOUT needs no number. WHIRLPOOL asks the steep temperature (170°F), the steep minutes (10) and a settle, SETTLE MIN, which is zero unless you want the hops to rest with the pump off after the steep. YEAST asks the pitch temperature (65°F). A name goes on every one. A boil hop longer than the boil is refused, CAN'T EXCEED THE boil.
  • Fermenter side. Dry hops that come in with an online recipe are listed grey with their days, not part of the brew day. They are not edited here.
  • WATER & SALTS. If a recipe brings water and salts, a band at the top of the MASH card opens the sheet: the fill volume, each salt in grams or acid in millilitres, and a note.
  • During a brew day. Past steps are done and locked. The current step takes a new temperature or new minutes left. Later steps are fully editable; a temperature below the kettle warns You are past this mash temperature, with SET ANYWAY. Hops during the boil: you can add one, delete one that is still ahead, or RETIME it; a time already passed offers ADD NOW.

14. Schedule start, the details

Section 8 has the basics.

  • The date wheel reaches fourteen days out, with Today and Tomorrow by name. The time wheel moves in quarter hours and starts at the next quarter hour.
  • Run pump during preheat remembers your last choice. The pump only starts once the brew itself starts.
  • SCHEDULE greys with Clock not set or The start time is in the past. If the kettle cannot heat in time it says Starts right away in amber and still lets you schedule.
  • The time you set is when the water reaches your first mash step, worked back from how fast your kettle heated last time.
  • The countdown screen offers DISCARD or START NOW.
  • SCHEDULE WAITING means heat is on by hand or the probe has no reading. SCHEDULE MISSED means the clock jumped past the start, or the probe had no reading fifteen minutes after it.
  • Tapping START HEATING yourself cancels a schedule.

15. Brew day buttons and prompts

Section 6 has the flow.

  • GRAINS ARE IN can be tapped a few degrees early. MUTE silences a prompt's reminder.
  • On the boil face, tapping the HEAT box opens HEAT POWER, a keypad with DISCARD or SET.
  • The boil-over guard in section 6 is a 240V thing. A 120V element cannot boil over, so it has no guard.
  • Before you tap ROLLING BOIL you can change the boil time: tap the additions panel, then SET BOIL TIME (LIVE), and the hops keep their minutes from the end. After ROLLING BOIL it reads THE BOIL IS RUNNING - CAN'T CHANGE IT NOW.
  • HOPS IN acknowledges every addition that is due.
  • A prompt that needs your tap closes an open hop pad or log sheet and brings the brew screen back, and its chime sounds whatever screen you are on.
  • FINISH BREW DAY appears once the boil is over and nothing is counting down. During a chill it is the small finish early button, and its card names the steps it would skip.

16. Logging your readings

The controller can keep your pH, gravity and volume readings with the brew day. Logging is optional, and the brew day runs the same without it.

  • One chip at a time, in brewing order. LOG MASH pH appears once the grains are in. LOG PRE-BOIL appears on the climb to the boil. LOG POST-BOIL appears once the boil is done.
  • What each one asks. LOG MASH pH asks for the pH. LOG PRE-BOIL asks for gravity and volume. LOG POST-BOIL asks for gravity, volume and pH. Fill in what you have and leave the rest empty.
  • No rush. A chip stays up until you save it, skip it, or the brew day ends, so a sample can cool first.
  • The buttons. SAVE keeps the reading. DISCARD closes the sheet and leaves the chip for later. SKIP takes that chip away for the rest of this brew.
  • At the end. BREW DAY COMPLETE offers LOG READINGS, which opens any sheet you did not log, and LOG KNOCKOUT, for a gravity and pH taken in the fermenter if you adjusted the wort after the boil.
  • Units. Gravity is specific gravity, like 1.052, and volume is in gallons. A zero is not kept, and saved readings survive a power cut.
  • Where they go. On a linked controller your readings go with the brew log to your Beer Builder account. A controller that is not linked sends them nowhere, and they are cleared when the next brew day starts.

17. Auto-tune

On the CALIBRATION screen, the AUTO-TUNE card. It measures how your kettle heats and sets the controller's heating control for your voltage.

  • Fill with your normal water, turn the pump ON, pick the Tune at temperature (150°F) and tap START.
  • Plan one to two hours on 240V and two to four on 120V. It runs three cycles.
  • STOP ends it with nothing changed. A failed run says so and changes nothing.
  • When it finishes it holds the new tune for ten minutes. REVERT puts the old one back, CLOSE keeps the new one.
  • The pump turns itself off five minutes after it ends. It will not start while a brew is scheduled.

18. Clean mode

The mode switch at the top of the screen has three positions: manual, brew and clean. Tap it to step to the next one. A brew day or a clean that is running asks before it switches.

Setting up a clean. The card on the right:

  • TIME: 30 MIN, 1 HOUR, or CUSTOM to type your own minutes.
  • WATER: the gallons in the kettle. Tap the box to type it.
  • TEMPERATURE: the cleaning temperature. Tap the box to type it.
  • PBW PER GALLON: LIGHT, NORMAL or HEAVY, which is 1, 1.5 or 2 ounces of PBW per gallon.

ADD PBW under them is your dose: the gallons times the ounces per gallon, to the half ounce. The two Five Star lines are the maker's guidance. A number outside it gets a warning and SET ANYWAY takes it anyway.

Running it. Turn the pump on and tap START CLEAN. With the pump off the controller asks first: PUMP ON turns the pump on and starts, SOAK starts with the pump off, BACK closes the card. The controller never turns the pump on by itself.

While the kettle heats, the card shows the minutes and the temperature it is heading for, and the box on the left says HEATING with the time to heat once it has a reading. When the kettle arrives, the clock starts counting and the box says HOLDING. The clock stops whenever heat is off or the probe is missing.

The end. At zero the heat and the pump turn off and the screen says CLEAN DONE: drain the kettle, then rinse it with clean water before you brew. STOP ends a clean early, and the heat and pump go off then too.

On your phone. With a phone paired, the phone page shows CLEAN MODE with the clock while it runs, and sends CLEAN DONE when it ends.

19. Privacy

Your data, and two switches. On Wi-Fi the controller sends: how a brew day is going, every ten seconds, so your phone page and alerts work; the brew log to Beer Builder when the controller is linked to your account; a one-line report if it ever restarts after a fault; and, by itself, an update check, a sign-in and a clock check. Brew-day progress and the brew log share one switch, Brew Day Reports, and the crash report has its own, Crash Reports, both under the gear, SYSTEM. Both are on when the controller is new. SEND TO SUPPORT always works.
