Amber Belgian Candi Syrup D-45 sits between plain candi sugar and the deep D-90, prized for adding toffee and toasted flavor while keeping a beer light on its feet. Cooked to develop Maillard character the way the dark syrups are, it stops well short of the raisin and date intensity of D-90, which makes it the right choice for Belgian ales that want warmth and complexity rather than dark fruit.

At 45 °Lovibond and 32 PPG it contributes real amber color and fully fermentable extract, so it raises alcohol and deepens color while thinning the body rather than building it. One pound adds roughly 7.5 SRM to a 6 gallon batch.

For strong Belgian ales, add the syrup partway through fermentation rather than in the boil. This keeps the yeast from being stressed by the full sugar load at pitch and helps the beer finish dry.
