Brew pub-quality beer at home for a fraction of the price. This Witbier recipe kit comes with every pre-measured ingredient you need to brew Martin's Belgian Wit, a 5-gallon all-grain batch, from grain to glass.

Witbier is the Belgian white ale that Pierre Celis brought back from near extinction in the 1960s, reviving an old Leuven tradition at his Hoegaarden brewery. It is brewed with a large share of unmalted wheat, which gives it a pale, milky haze and a soft body, and it is spiced rather than heavily hopped. Coriander and orange are the usual additions, though brewers have always played with the blend. The beer finishes light, tart, and faintly citrusy.

This version, a collaboration with Mean Brews, calls for chamomile and grains of paradise, spices you add yourself to dial in the aroma. A gentle Saaz hopping keeps the focus on the wheat and the spice.

A Note On Substitutions

This kit includes Munich Malt in place of the recipe's Munich I (Weyermann). We stock dry yeast only, so SafAle BE-256 (Belgian Abbey) dry yeast stands in for the recipe's Belgian Wit II (White Labs WLP410). Not included, add your own: 1.00 oz Chamomile; 0.25 oz Seeds of Paradise.

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

That yields roughly 53 bottles of fresh Witbier. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
    • A grain bag for brew-in-a-bag (or a mash tun for a traditional mash)
    • A fermenter with an airlock
    • A thermometer and a way to chill the wort
    • Sanitizer, and bottles or a keg for packaging
