You can start brewing beer this weekend with one simple kit. This Berliner Weisse recipe kit comes with every pre-measured ingredient you need to brew Martin's Blackberry Berliner Weisse, a 5-gallon all-grain batch, from grain to glass.

Berliner Weisse was once the most popular drink in Berlin, a pale, tart wheat beer so widespread that Napoleon's troops reportedly called it "the Champagne of the North." It is sharply sour and very low in alcohol, light enough to disappear on a hot day, with the acidity coming from a lactic culture rather than heavy hopping. Bitterness barely registers.

Berliners traditionally cut the tartness with a shot of fruit or woodruff syrup, and this recipe takes that idea into the fermenter with blackberries, which lend deep color and a jammy counterpoint to the sour base. The wheat keeps the body soft under all that acidity.

A Note On Substitutions

This kit includes Wheat Malt in place of the recipe's Wheat Malt, Pale (Weyermann). We stock dry yeast only, so SafAle K-97 (German Ale / Kölsch) dry yeast stands in for the recipe's German Ale (Wyeast Labs 1007). Not included, add your own: 4 lbs blackberry puree; Lactobacillus Blend.

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Berliner Weisse. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.
