Calcium carbonate (chalk) raises mash alkalinity and pH, offsetting the acidity of dark roasted malts. It's mainly used in stouts, porters, and other dark beers where the grist would otherwise drive mash pH too low.
How to Use
- Add to the mash to raise pH in dark, roast-heavy grists.
- Typical rate: 1 tsp per 5 gallons; add gradually and measure pH.
- Best dissolved in the mash rather than treated water.
