This is craft beer at home, minus the guesswork. This Kölsch recipe kit comes with every pre-measured ingredient you need to brew Martin's Campsite Kolsch, a 5-gallon all-grain batch, from grain to glass.
Kölsch belongs to Cologne and, by German agreement, can only carry the name if it is brewed there. It is a hybrid: fermented with ale yeast at cool temperatures, then lagered cold, which gives it the fruit of an ale and the crispness of a lager. The color is pale straw and the body light, with a gentle but present bitterness.
Traditionally it is served in Cologne's tall, narrow Stange glasses, swapped out by roving waiters the moment yours runs dry. Delicacy is the whole point, so clean fermentation and fresh ingredients matter more than any single bold flavor. This one keeps to that restraint, an easy pale beer for a warm afternoon.
