Make delicious beer at home without a chemistry degree. This American Amber Ale recipe kit comes with every pre-measured ingredient you need to brew Martin's Dampfbier, a 5-gallon all-grain batch, from grain to glass.

Dampfbier, or "steam beer," comes from the Bavarian Forest near the Czech border, a poor region that brewed it long before refrigeration made lagering easy. The trick is the yeast. An all-barley amber wort is fermented warm with a Bavarian wheat strain, so you get the banana and clove esters of a hefeweizen sitting on top of a bready, lightly toasted malt base.

Hallertau Mittelfruh keeps the hopping soft and old-fashioned. Amber in the glass and lively with carbonation, it is a rustic beer that tastes older than it looks. It also has nothing to do with the California "steam beer" that shares the nickname.

A Note On Substitutions

We stock dry yeast only, so SafAle WB-06 (Wheat) dry yeast stands in for the recipe's Hefeweizen IV Ale (White Labs WLP380).

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh American Amber Ale. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
    • A grain bag for brew-in-a-bag (or a mash tun for a traditional mash)
