Double Kilned Munich from Riverbend Malt House in Asheville, North Carolina is the malt we stock in place of German melanoidin malt. Melanoidin malt is made by kilning heavily to build up melanoidins, the browning compounds behind the deep, rich flavor of decoction-mashed lagers. Riverbend gets to the same place by running its Munich malt through the kiln twice, so we stock Riverbend's version and use it one-for-one where recipes call for melanoidin.

With an extract potential of 35 PPG and a color of 28 °Lovibond, Double Kilned Munich adds a deep amber to light copper tone along with its flavor. Small amounts noticeably round out a beer's malt profile.
