Dunkles weissbier is the dark version of Bavarian wheat beer, and historically it came first, since dark wheat beers predate the pale ones that only modern malting made possible. The weizen yeast still runs the show with its banana and clove, but here it plays against Munich and Vienna malt that layer in bread crust, toast, and a soft caramel sweetness.

The color deepens to amber-brown, and the beer drinks a touch fuller and rounder than a pale weissbier while staying just as lively on the tongue. It is a common sight in Bavarian beer gardens and a natural next step for anyone who already likes hefeweizen.

A Note On Substitutions

This kit includes Wheat Malt in place of the recipe's Wheat Malt, Pale (Weyermann); Crystal 50 in place of the recipe's Caramunich® III. We stock dry yeast only, so SafAle WB-06 (Wheat) dry yeast stands in for the recipe's Hefeweizen Ale (White Labs WLP300).

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Dunkles Weissbier. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.
