German Pils is the north's drier, sharper reading of the Bohemian original. When the pilsner style traveled from Plzen into Germany, brewers with harder water and a taste for bitterness pushed it toward a paler, crisper, more hop-forward beer. The result is straw-gold and brilliantly clear, defined by a firm bitterness and a spicy, floral noble-hop aroma.
Malt takes a supporting role, just a lean cracker note to carry the hops, and the beer attenuates well to a dry, clean finish that pulls you toward the next sip. Here it reaches past 36 IBUs, with Perle and Hallertau Mittelfruh supplying both the backbone and the aroma. It is the everyday pint of northern Germany for good reason.
