Noble Hallertau Character • Floral and Herbal • Classic German Lagers and Ales

German Tradition, also sold as Hallertauer Tradition, was bred at the Hull hop research center in Germany in the early 1990s from Hallertau stock. It was developed to deliver the soft noble character of Hallertau Mittelfruh on a plant that holds up better in the field, and it has become a standard in German brewing.

Our lot measures 4.9% alpha acid. That puts it right in the range for noble-style bittering and late additions, and it is a good backup for our Hallertau when you want that classic German profile.

Used for bittering it gives a clean, rounded bitterness. Late additions bring the floral and herbal noble character forward without ever turning harsh.

German Tradition is a staple in traditional German and Continental styles, including:

It also suits American lagers, cream ales and Belgian styles where a restrained noble hop is wanted.

Usage Recommendations

For a 5 gallon batch, use 1 to 2 oz at 60 minutes for bittering in a pilsner or helles, and 0.5 to 1 oz at 15 minutes or flameout for aroma. In a hefeweizen, a single 60 minute addition is usually all the beer needs.

Pair it with Hallertau, Hersbrucker or Tettnang for a fuller noble character, or use it alone for a clean, classic German profile.
