This is the simplest way to brew all-grain beer at home. This Gose recipe kit comes with every pre-measured ingredient you need to brew Martin's Gose, a 5-gallon all-grain batch, from grain to glass.

Gose comes from Goslar in the Harz mountains and made its name in Leipzig, where it became the local specialty. It is an old sour wheat beer seasoned with coriander and salt, the salt a trace of the mineral water the style grew up on. It nearly died out in the twentieth century and survived because a handful of Leipzig holdouts kept brewing it.

The beer pours pale and cloudy and drinks tart and quenching, with a light saline snap that sets it apart from other sours. Modern brewers often push it toward fruit, and this recipe is set up for a passion fruit version, so you add the fruit puree yourself to taste.

A Note On Substitutions

This kit includes Hallertau Mittelfrüh in place of the recipe's Hallertauer Hersbrucker. We stock dry yeast only, so SafAle K-97 (German Ale / Kölsch) dry yeast stands in for the recipe's German Ale (Wyeast Labs 1007). Not included, add your own: 3 lbs passion fruit puree.

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Gose. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
    • A grain bag for brew-in-a-bag (or a mash tun for a traditional mash)
    • A fermenter with an airlock
    • A thermometer and a way to chill the wort
    • Sanitizer, and bottles or a keg for packaging
