This all-grain recipe kit takes the guesswork out of brew day. This Kölsch recipe kit comes with every pre-measured ingredient you need to brew Martin's Hoppy Kolsch, a 5-gallon all-grain batch, from grain to glass.

This Kolsch came out of a collaboration with City Brew Tours. It keeps the Cologne template, an ale fermented warm then cold-conditioned like a lager, which leaves it pale, delicate, and faintly fruity with a dry finish. Where it strays from tradition is the hopping: alongside noble Hallertau it reaches for Cashmere and Simcoe, a more modern, fruit-leaning aroma than a Cologne brewer would recognize.

The result is light and easy at 5% but with a berry and stone-fruit twist up top. If you want to push it toward a fruited version, a little raspberry extract in secondary takes it there.

Your Kölsch recipe kit includes everything below, portioned and ready to brew. All you add is water.

A Note On Substitutions

We stock dry yeast only, so SafAle K-97 (German Ale / Kölsch) dry yeast stands in for the recipe's Kolsch Yeast (Wyeast Labs 2565). Not included, add your own: 2.00 oz Raspberry Extract.

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Kölsch. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
    • A grain bag for brew-in-a-bag (or a mash tun for a traditional mash)
    • A fermenter with an airlock
    • A thermometer and a way to chill the wort
