LalBrew NovaLager is a genuinely new kind of lager yeast from Lallemand: a true bottom-fermenting Saccharomyces pastorianus hybrid from a novel Group III lineage, bred by classical non-GMO methods rather than selected from existing lager strains. It produces clean, crisp, authentic lager beer across an unusually wide temperature range, including warm ale-territory fermentations.
It exists to remove the two classic lager headaches: temperature control and sulfur cleanup. With 78 to 84% attenuation and medium flocculation, NovaLager finishes dry and refreshing, and it uses patented UC Davis technology that inhibits hydrogen sulfide production, so the long conditioning normally needed to clean up a lager largely goes away.

Fermented cold it behaves like a traditional lager strain with faster conditioning. Fermented warm, up into the high 60s °F, it stays remarkably lager-like, which makes honest lager possible without dedicated temperature control.

Usage Recommendations
Pitch one 11 g sachet into 5 gallons of standard-gravity wort. For gravities above about 1.060, or for a cold fermentation in the low 50s °F, pitch two. It can be sprinkled dry onto the wort or rehydrated first.
Its working range is 50 to 68 °F. Toward the bottom you get the crispest, most traditional result; toward the top you trade a little of that for a fermentation that finishes in days rather than weeks. Alcohol tolerance is 13% ABV.
