Heavy Bittering Power • Herbal and Resinous • The Efficient Workhorse

Nugget is one of American brewing's great bittering hops, prized for delivering a large, clean load of bitterness from a small charge. Bred in Oregon and released in 1982, it built its reputation in the kettle rather than the dry hop, and it remains the hop many brewers reach for when they want firm bitterness without spending half the hop bill to get there.

With an alpha acid content around 13%, Nugget does the work of two ounces of a low-alpha variety in a single ounce. What it gives beyond bitterness is a heavy herbal and resinous character, more green and piney than fruity, that suits classic American ales and anything meant to taste assertive rather than delicate.

Flavor & Aroma Profile

  • Strong herbal and green character
  • Pine and resin, leaning dank
  • Peppery, spicy edge
  • Light stone fruit underneath
  • Firm, clean bitterness with no harshness

Used at 60 minutes it disappears into the beer as pure bitterness. Later additions bring the herbal and resinous side forward, which can dominate a delicate beer but gives backbone to a hop-forward one.

Brewing Applications

Nugget is a staple bittering hop across a wide range of styles, including:

  • American IPA
  • American Pale Ale
  • Imperial IPA
  • American Barleywine
  • American Stout
  • Robust Porter

It is also a common choice in high-gravity beers, where its efficiency keeps the kettle from filling with hop matter just to reach the target bitterness.

Usage Recommendations

For a 5 gallon batch, 0.5 to 1 oz at 60 minutes will carry most of the bitterness in a pale ale or IPA. Add 0.5 to 1 oz at 15 minutes or at flameout if you want the herbal, resinous character to show. Nugget is used in the dry hop less often, but a small charge adds a dank green note behind fruitier varieties.

Pair it with citrus-forward American hops such as Cascade, Centennial or Citra, which sit comfortably on top of Nugget's herbal base.
