Brew authentic beer at home the way it is meant to taste. This Pre-Prohibition Lager recipe kit comes with every pre-measured ingredient you need to brew Martin's Pre-Prohibition Lager, a 5-gallon all-grain batch, from grain to glass.

The pre-Prohibition lager is what American lager was before Prohibition and the long thinning that followed it. Brewers used a large share of corn to lighten the all-malt bite, but they hopped the beer far harder than its modern descendants, giving it a bitterness a light-lager drinker today would not expect.

It pours pale straw to gold, clean and crisp, with corn-driven sweetness set against a firm, spicy hop finish. This is the lager of the old regional breweries, closer in spirit to a Continental pilsner than to anything in a modern twelve-pack.

A Note On Substitutions

This kit includes Great Chit in place of the recipe's Carapils®; Northern Brewer in place of the recipe's Cluster. We stock dry yeast only, so SafLager S-189 (Pilsner Lager) dry yeast stands in for the recipe's Pilsen Lager (Wyeast Labs 2007).

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Pre-Prohibition Lager. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
    • A grain bag for brew-in-a-bag (or a mash tun for a traditional mash)
    • A fermenter with an airlock
    • A thermometer and a way to chill the wort
    • Sanitizer, and bottles or a keg for packaging
