One kit, one brew day, five gallons of beer you made yourself. This Rauchbier recipe kit comes with every pre-measured ingredient you need to brew Martin's Rauchbier, a 5-gallon all-grain batch, from grain to glass.

Rauchbier is the smoked lager of Bamberg, in Franconia, where a few historic breweries still malt their barley over open beechwood fires. That smoke carries straight into the beer, giving an aroma and flavor often compared to smoked ham or a wood fire, layered over an amber, Marzen-style malt base. The first sip surprises; by the third glass it makes complete sense.

Under the smoke sits a properly built lager: toasty Munich malt, a clean fermentation, and enough hop to hold it in balance. The smoke is bold but not acrid, and it fades into a smooth, malty finish. It is one of the most distinctive beers in the German canon, and a genuinely rewarding one to brew.

A Note On Substitutions

This kit includes Crystal 50 in place of the recipe's Caramunich® I. We stock dry yeast only, so SafLager W-34/70 (German Lager) dry yeast stands in for the recipe's German Lager (White Labs WLP830).

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Rauchbier. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
    • A grain bag for brew-in-a-bag (or a mash tun for a traditional mash)
    • A fermenter with an airlock
    • A thermometer and a way to chill the wort
    • Sanitizer, and bottles or a keg for packaging
