SafAle T-58 is Fermentis' specialty ale strain, prized for the peppery, spicy phenolics and fruity esters that give Belgian and farmhouse beers their character. It is the dry yeast brewers reach for when a clean American strain would leave the beer tasting like it was missing something.

Attenuating 75 to 80% with high flocculation, T-58 finishes dry and drops bright without help, giving a beer that is both expressive and clean to package. It performs across a wide temperature band, which makes the character adjustable rather than fixed.

Usage Recommendations

One 11.5 g sachet pitches a standard 5 gallon batch of average gravity. Rehydrate or pitch dry into well aerated wort. Ferment at 64 to 68 °F for a restrained, balanced character, or push toward 72 to 75 °F to build the peppery spice and ester load that defines Belgian styles.

For strong Belgian beers, pitch two sachets and start cool, letting the temperature rise through the second half of fermentation to finish dry without harsh fusels.
