Homemade beer, made simple and made fresh. This Sweet Stout recipe kit comes with every pre-measured ingredient you need to brew Martin's Sweet (Milk) Stout, a 5-gallon all-grain batch, from grain to glass.

Sweet stout, also called milk stout, gets its name and its body from lactose, a sugar drawn from milk that yeast cannot ferment. What is left behind is residual sweetness and a fuller mouthfeel that softens the roast. The style was once marketed as nourishing and served to nursing mothers and the unwell. Mackeson is the classic English example.

The result is a smooth, dark, faintly sweet stout with notes of chocolate and coffee rounded off by the lactose. Flaked oats add to the silky texture, and the hopping stays low so the sweetness leads.

A Note On Substitutions

This kit includes Maris Otter in place of the recipe's Pale Malt, Maris Otter (Thomas Fawcett); Roasted Barley in place of the recipe's Roasted Barley (Thomas Fawcett). We stock dry yeast only, so LalBrew Windsor (English Ale) dry yeast stands in for the recipe's Ringwood Ale (Wyeast Labs 1187).

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Sweet Stout. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
