This recipe kit is the easy on-ramp to all-grain brewing. This Tropical Stout recipe kit comes with every pre-measured ingredient you need to brew Martin's Tropical Stout, a 5-gallon all-grain batch, from grain to glass.

Tropical stout is the Caribbean take on the dark beer the British left behind, a high-gravity, sweeter stout brewed for hot climates and often fermented warm enough to ruin a colder style. Guinness Foreign Extra is the template. Expect a full body and a pronounced sweetness, with dark fruit notes of raisin and molasses over a coffee-like roast.

This version takes an unusual turn, pairing that dark malt bill with modern fruit-forward hops in Citra and Nectaron and a lager yeast fermented warm, which pushes the tropical side of the style. Special B and Carafa deepen both the color and the dried-fruit character.

A Note On Substitutions

This kit includes Crystal 80 in place of the recipe's Caramel/Crystal Malt -120L; Crystal 50 in place of the recipe's Crystal 45; Carafa II in place of the recipe's Carafa Special II (Weyermann); Roasted Barley in place of the recipe's Roasted Barley (Thomas Fawcett); Magnum in place of the recipe's Target; Nectaron in place of the recipe's Motueka. We stock dry yeast only, so SafLager S-189 (Pilsner Lager) dry yeast stands in for the recipe's Bohemian Lager (Wyeast Labs 2124).

  • This kit is built for brew-in-a-bag (BIAB), the simplest way to make all-grain beer at home. The basic brew day looks like this:

    1. Heat your water and steep the milled grain to make wort.
    2. Boil the wort, adding the hops on the schedule in the recipe.
    3. Cool the wort down quickly, then transfer it to your fermenter.
    4. Pitch the yeast and let it ferment for about two weeks.
    5. Bottle or keg, wait for carbonation, then enjoy.

    That yields roughly 53 bottles of fresh Tropical Stout. It works great with our digital electric homebrew systems, which hold your temperatures for you, though any kettle and burner will do.

  • This is a recipe kit, so it includes the ingredients only. To brew it at home you will also need:

    • A brew kettle or an electric all-in-one brewing system
    • A grain bag for brew-in-a-bag (or a mash tun for a traditional mash)
    • A fermenter with an airlock
    • A thermometer and a way to chill the wort
    • Sanitizer, and bottles or a keg for packaging
