Yeast is the single most important ingredient in the process of making beer, wine, spirits, and even fuel alcohol. Why? Well, remember, the process of distillation does not make alcohol, it only concentrates alcohol to increase the proof. Alcohol is made during the fermentation process, and fermentation is made possible by combining two critical ingredients: sugar and yeast.
